On the West side of town, off of Route 66, just East of Coors Blvd, you’ll see a sign with an arrow for “Western View, Steak House, Coffee Shop”. If you’re hungry, go in! Here you will find great diner fare, including my beloved huevos rancheros- and therefore diner fare with chile. What’s not to love?
Western View Diner Huevos Rancheros
I can barely see the eggs atop a corn tortilla because of the generous helping of cheddar cheese mixed into Christmas chiles. But they are there, cooked to order. The sides are pan potatoes and whole pinto beans, all with a light lettuce and tomato garnish.
The green chile is a tasty and fairly mild sauce that I could probably put on anything. It’s light green in color and the chile is chopped and roasted, stewed to perfection. Here, the green is my favorite. I hear a few murmurs of “hot” in terms of the chopped green chile, but this green chile sauce is delicious, perfect for me. The red chile is a deep red and definitely hotter than the green. The medium heat is peppery, but still tasty and a little smoky. The two chiles complement each other. The cheese brings out even more taste.
The pan potatoes are cooked just right, not too hard or soft, with a little bit of spice. I really like the whole pinto beans, cooked simply with a natural taste and good consistency. A flour tortilla is served on the side. The portion is just right for a hearty breakfast or lunch.
It is hard to believe I’ve never taken the time to lunch here before, but now I’m glad to know the Western View is a wonderful one indeed! I’ll be back…
